As the Operational Manager, you will be responsible for managing all F&B operations, ensuring strict compliance with hygiene and safety legislation, and working closely with the Sales and Marketing team to provide a seamless experience for the customers. With a strong focus on leadership, innovation, and financial accountability, this role presents an unparalleled opportunity for growth and development in the F&B industry.

Key Duties and Responsibilities:

1. Oversee daily operations, ensuring they align with budgeted guidelines and meet the highest standards.
2. Work as the department representative for Special Events, managing planning, delivery, and liaising with relevant teams.
3. Maintain F&B Management invoices and journals, manage expenditure, and assist in budget setting for the department.
4. Create and operate within efficient labor budgets for each season, track spending, and provide input regarding capital projects and initiatives.
5. Assist in planning and implementing new ideas and menu specifications, ensuring they fit guidelines and meet guest expectations.
6. Take ownership of Corporate Event menus, signing them off seasonally in conjunction with the Corporate Events Manager.
7. Provide leadership, counseling, advice, and feedback to your teams, attracting and retaining talented personnel.
8. Craft outstanding menus, procure supplies, and continuously make necessary improvements.
9. Establish targets, schedules, policies, and procedures for the F&B team.
10. Report on management regarding sales results and productivity, and work Duty Manager shifts as required.
11. Organize and deliver events and functions alongside events coordinators.
12. Maximize up-selling opportunities for profitable sales growth and control wastage and portioning.
13. Manage stock control, including ordering, acceptance, maintenance of stock levels, and reporting of any sub-standard items.
14. Oversee the recruitment of fixed-term and casual labor and attend weekly team meetings to maintain communication across the team.
15. Ensure financial accountability by achieving monthly targets, reporting departmental figures, and recording income in the Activity Drivers spreadsheet.
